Get tactics instead of strength if your are going for survival. Take advantage of stances like bonneti's defense, gladiator's defense, shied stance etc.
After you finish the 2 attribute point quests and ascend, you are looking at:
12 Sword (11 + 1)
12 Tactics (10 + 2)
2 Stregnth (1 + 1)
10 Healing
200/200

Really that low of Strength? Why would you say that? And what are the benefits of having so high a Swordsmanship rating?
And what's 200/200?

200 total stat points; 200 used up in the stat allocation. If you're a monk in the first place, you won't need so high of tactics unless you want to farm or solo, but stats like firstwave's layout will get you far in pve -if not in pvp.

Yeah I wana be a PvE player... i'm not into that PvP stuff. I am looking to be a good Solo PvE guy first... maybe venture into PvP later, but right now I want to master PvE.
What does the high Swordsmanship do for me? And why so low the Strength?

Yeah survival wise i'd definetly use Tactics, its really underated but quite effective in survival and use it on my warrior build and tactics goes quite well with swords as well, at the moment my warrior is all pure warrior mainly because i'm not wanting to sacrifice strength, I prefer a little damage so the armour penetration comes quite usefull, i'm also a axe user. In the end I might go a prot w/mo which in my opinion goes quite well with Tactics.

my w/mo using healing too. I just use healing breeze
12 sword
12 tactics
5 strength
9 healing
i know i got some skill points left over, but between 9 and 10 healing there isn't a difference in healing breeze.

well i guess its different for us, I use axe so I get 12 axe mastery.
The trick to my build is I get +20 hp everytime I strike something. Live Vicariously + Vigourous spirit can do that. With cyclone axe, I can regain 80-100 hp every 5 seconds. I do not really need strength because most of my skills are tactics. Gladiator's defense, balanced stance, watch yourself! etc.
You want to get 12 swordsmanship because it enables you to do 100% damage.
I recommend axe for PvE because it does more raw damage. For me, survival is more important than damage, so I do not really need strength at all. With tactics and healing, I rarely die even when I am aginst 4-5 hydras =D
I don't really like healing breeze because it takes 10 mana and I think getting 20 hp per hit is better.

breeze really depends on where you are soloing. against hydras i probably would use W/E build rather than w/mo. Armor of earth and/or obsidian flesh coupled with balanced stance and you can really take down those hydras.
I just use my w/mo build for general usage. I generally don't like enchantments that much because of those places on the map where mesmers or necros strip them off. that's why i got healing signet in there... probably one of the best self healing skills.

True, i used to focus alot on healing but got put off when those memser and necro mobs litterally owned you if you dared to use any enchantments so I carry healing sig too but only use it with other skills running to ease that -40 armour penalty.

Well for farming, I choose the places that would suit my skills. So obviously I won't solo mesmer/necro foes. Healing Signet is great, but I never use it during a fight unless I have a stance on.

Be aware that mastering PvE will not prepare you for PvP at all. PvE Warriors are 90% defense. PvP Warriors are 100% offense. Still, I'd encourage you to try the arena in Lion's Arch or Yak's Bend (depending on your level). Many PvE-only players were pleasantly surprised when trying PvP.

hmm i would go with a build like this
Swordsmanship: 11 (77)
Tactics: 10 (61)
Protection Prayers: 10 (61)
Skills:
1) Sever Artery (availability) - (4a,0,0) If this attack hits, the opponent begins bleeding for 20 seconds, losing health over time.
2) Pure Strike (availability) - (5,0,8) If Pure Strike hits, you strike for +22 damage. If you are not using a stance, Pure Strike cannot be blocked or evaded.
3) Galrath Slash (availability) - (8a,0,0) This attack strikes for +29 damage if it hits.
4) Final Thrust (availability) - (10a,0,0) Lose all adrenaline. If Final Thrust hits, you deal 29 more damage. This damage is doubled if your target was below 50% health.
5) Healing Signet (availability) - (0,2,4) You gain 115 health. You take double damage while using this skill.
6) Mark of Protection (availability) (elite) - (15,1,45) For 10 seconds, whenever target ally would take damage, that ally is healed for that amount instead, maximum 42. All your Protection Prayers are disabled for 10 seconds. This is an elite skill.
7) Shielding Hands (availability) - (5,34,25) For 10 seconds, damage received by target ally is reduced by 13.
8) Balthazar's Spirit (availability) - (10+,2,0) While you maintain this enchantment, target ally gains adrenaline and energy after taking damage.
Balthazar's Spirit right away. Healing Signet only when you are safe, or maybe being attacked by a weak enemy. If you get in trouble cast Mark of Protection or Shielding Hands and then use Healing Signet so you wont get hit as hard.

that's funny, because most pve warriors i see are pure offense and get "pwned" by regular mobs. it's rather amusing to see a lvl 20 w/mo with draknor's armor and get killed by 3 white mantle.

What are the two attribute point quests? Does it allow you to get more attribute points even after reaching lvl 20?
